    Badia fajita seasoning is the absolute best! I make my own sofrito and it’s very forgiving. But what about the Discos?!

    Use it to marinate chicken before frying! That's my primary use for it, which I will be doing later this week. :drool:

    Thanks guys! If anyone has a go to recipe for biscuits or ranch let me know! Gotta revise my meal plan for this week for some unfried chicken, salad with ranch, biscuits, and mac and cheese (also have cream to use up).

    These blue cheese biscuits with buttermilk and cornmeal are my favorite. Goat cheese is a great substitute too.

    Anyone got any ideas on using up a frankly ludicrous amount of pita bread my mother impulse-bought me?

    I’ve done pita pizzas, cut some up with baba ganoush/tabbouleh/hummus, maybe breakfast wraps are next?

    My mom always makes basically shredded roast beef mixed into a caesar salad and stuffs it in a pita. Great way to use up left over roast beef too. Also tuna salad in pitas is delish.

    First off, bless my mother in law for her amazing generosity. Holy cow.

    Secondly, I feel like I have imposter syndrome. My culinary abilities aren’t Le Creuset worthy at all (still happily keeping it though).

    I made braised short ribs and baked inside out red velvet cookies this week.

    A few months ago I would have never pictured myself making either one. I’d never really baked, pretty much never used my oven for anything but frozen pizza. Growth.

    I just read a comment on a recipe saying 1/4 tsp of pepper in 1 lb of ground beef would make it too spicy. Even if she meant pepper flakes, that seems way mild, but I'm pretty sure the recipe calls for black pepper. How does this person ever eat food she didn't cook herself??

    I love weird comments on recipes, the crazy substitutions are always my favorite but we always have to double or triple the spices!
