    I just finished making this. Oh. Mah. Gawd. So far only tasted it to adjust seasoning and I can't wait until I actually get to eat it tonight. I also added andouille sausage because I was feeling extra saucy.

    Right?? I thought the etouffee was totally worth the extra effort of browning the roux. I bet the andouille made it insanely good!

    I'd never made a dark roux before, it was so nerve racking!! I kept thinking "burnt or not cooked enough??" :lol:

    Ditto! On top of that, I am an impatient cook so I kept wanting to say "good enough" and move on. I'm glad I stuck it out, haha.

    I just threw together the best black beans ever!

    Cook up 1 pound dry black beans. If you only cook them about an hour after soaking, then drain, reserving 1 cup of cooking liquid. In pot saute 1 onion, chopped with 1 Tablespoon cumin and 1 Tablespoon chili powder. Then, put in four cloves of garlic, finely minced. Saute for about a minute to warm up the garlic but be careful not to brown it. (Bitter garlic is the worst heartbreak.) Add 8 ounces tomato sauce. Let simmer for a few minutes. Add beans and stir and mash if you see fit. So YUMMY!

    If you cooked them to mush like I did, just saute all the ingredients in a different pot, add to the beans and mash the hell out of it.

    Next time I think I will add peppered bacon and green bell pepper.

    I know I've posted this before, but never in this thread. These zucchini corn pancakes are so good. I just made them with the honey sriracha chicken thighs I posted on page 1 of this thread. Mmm. I have a few more to add but I'll do that later because there is food to eat!

    I made this fried rice for dinner on Tuesday and it was soooooo good. J and I love all kinds of Asian food so I'm always trying new recipes. The tips/tricks I think are what really make it!

    We had this butternut squash carbonara last night, and it was faaaantastic. Note: the serving size is 2, but they are large servings.

    Does someone have a really awesome chicken enchilada recipe? There's so many and I'd like one that I know someone loves.

    I prefer pork enchiladas, but since the secret is in the sauce anyway, I'll share this again: http://www.food.com/recipe/mexican-enchilada-sauce-109685

    This recipe can be doctored a lot to taste. I like more spice, so add some cayenne pepper and cumin. I also use less water because I'm impatient and I don't want to sit there reducing the sauce forever.

    Yay! Thanks. I'll try those next weekend. I love pancakes too (duh) but waffles feel fancy and are a wonderful thing to look forward to.

    Here is the Jerk Asparagus recipe:

    INGREDIENTS

    • 1 teaspoon olive oil
    • 2 teaspoons minced fresh ginger
    • 4 cloves garlic, minced
    • 1/4 teaspoon red pepper flakes (or more if you like it spicy)
    • 1/4 teaspoon dried thyme
    • 1 pound asparagus, coarse ends removed
    • 1/4 teaspoon salt
    • 1/4 teaspoon allspice
    • Pinch of ground nutmeg
    • Pinch of ground cinnamon


    DIRECTIONS

    Preheat a large, heavy-bottomed skillet over medium-high heat. Saute the ginger and garlic in the oil for about 30 seconds. Add the red pepper flakes and thyme, plus a splash of water. Let it sizzle for a few seconds. Add the asparagus, salt, and spices. Use tongs to toss and coat, adding a few splashes of water if it seems dry. Saute for about 10 minutes, until the asparagus is tender and the ends are slightly frizzled.
    Serve immediately.

    It's really good. I use a little more of the red pepper flakes and ginger when I am making it for myself, a little less when W or someone else who is less into heat is eating it with me.
